The black grape vines vary in age from 22 years (the youngest Syrah) to 34 years (our Grenache parcel). We harvest by machine except for the Le Baron range, for which the selected grapes are hand-harvested. The grapes are destemmed before fermenting in tank. They are pressed after alcoholic fermentation and then racked into tank or barrel to go through malolactic fermentation to change the malic acid into lactic acid, giving a rounder flavour to the wine. In the case of the Le Baron range, the juice is racked to barrel before it has completed the alcoholic fermentation.
