  • Vinification: Cold settling for 36 hours at 12c followed by racking to 400 litre French oak barrels. Alcoholic fermentation in barrel at controlled temperature (16c - 17c) with natural and selected yeasts. No malolactic fermentation. Remains in barrel after alcoholic fermentation for up to 6 months on fine lees with periodic stirring to enhance complexity.
